Last summer, «в прошлом году» — рассказ о прошлом, значит Past Simple. Вопрос о планах на это лето и слова this year относятся к настоящему.
- we went to Disneyland — last summer, go → went (неправильный глагол).
- Did you have a good time? — вопрос о прошлом отпуске: Did + you + have.
- It was fantastic! — be в прошедшем: was (it — единственное число).
- The children loved it! — Past Simple: love + -d.
- We didn't want to leave! — отрицание Past Simple: didn't + want.
- What did you do there? — вопрос о прошлом: did + you + do.
- We stayed in a very nice hotel — Past Simple: stay → stayed (после гласной y не меняется).
- we saw all our favourite cartoon characters — see → saw.
- We also enjoyed some amazing rides — Past Simple: enjoyed.
- Are you planning anything for this summer? — планы на это лето: Present Continuous в вопросе.
- I don't think so — устойчивое выражение «не думаю», Present Simple (think не употребляем в -ing в этом значении).
- My husband is working overtime this year — временная ситуация этого года: Present Continuous.
- and I have a part-time job — глагол have в значении «иметь» (работу, дом, машину) не употребляется в Present Continuous, поэтому Present Simple: с I — have.

B: Did you have a good time?
A: It was fantastic! The children loved it! We didn't want to leave!
B: What did you do there?
A: We stayed in a very nice hotel and we saw all our favourite cartoon characters! We also enjoyed some amazing rides!
